sunday brunch

The best weeks start off with a lazy Sunday morning brunch consisting of pancakes, orange juice, pajamas, and the newspaper.  Although, really, you could swap out pancakes for waffles/biscuits/eggs and I would still be perfectly happy.

New week, new start.  With lots of butter.


Fluffy Buttermilk Pancakes
slightly adapted from Allrecipes.com

3/4 cup milk
2 tablespoons white vinegar
1 cup all-purpose flour
2 tablespoons white sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 egg
1 teaspoon vanilla extract
1 tablespoon butter, melted
cooking spray

-  Combine milk with vinegar in a medium bowl and set aside for 5 minutes to "sour".
-  Heat a large skillet over medium heat and coat with cooking spray.
Combine flour, sugar, baking powder, baking soda, and salt in a large mixing bowl. 
-  Whisk egg and butter and vanilla extract into milk.
-  Whisk the flour mixture into the wet ingredients until batter is mostly smooth. 
-  Pour batter onto the pre-heated skillet and cook until bubbles appear.
-  Flip with a spatula and cook until lightly browned on the other side. 
-  Makes approximately four large pancakes.
